How to Fry
Heat oil until properly hot, drop in a small handful at a time, and lift them out within seconds as soon as they puff up and turn crisp. Drain on kitchen paper. Serve with daal chawal, khichdi or evening tea, or season with chaat masala for a snack plate.
Storage
Keep raw papar sealed in a dry airtight box. Moisture is the enemy: damp papar does not puff properly. If pieces feel soft, a short while in sunlight dries them again.
