Jara Seve – Thin Crispy Nimko
Jara sev is the everyday sev of our shop, and it carries the gentlest price on the whole nimko shelf: Rs 250 for 500g, Rs 500 a kilo. It is a fine besan sev, thin and crisp, seasoned plainly with salt and a light hand of spice. Nothing about it is dressed up, and that is the point. This is the pack that lives in the kitchen jar and gets reached for without thinking.
What people actually do with it
Three jobs, mostly. It is eaten straight as a light tea snack by people who find the mixes too rich for daily use. It goes over home chaat, dahi and salads when a full chaat grade sev is not in the house. And it is the sev home cooks stir into their own mixtures with fried daal and peanuts, building a mix at their own balance and their own budget. A kilo at this rate makes experimenting cheap.

How is jara sev different from bareek sev? Bareek is the finest chaat grade, hair thin and fragile. Jara is the fine everyday sev: a touch sturdier, plainly seasoned, and priced for daily use.
Why is it cheaper than the other sevs? It is the simple, standard cut of the shelf, made for volume and everyday eating rather than a special job.
