Slanty Shape Papar
Slanty papar is the papar that never left the Pakistani table. These are slanted strips of maida papar, sold raw and hard in the packet, that puff into crisp golden ribbons the moment they meet hot oil. At Rs 200 for 500g and Rs 400 for 1kg, slanty is the cheapest papar we sell, and for everyday eating with daal chawal it is still the one I reach for first. The slanted strip is not decoration. A strip fries evenly from edge to edge, with no thick middle left chewy, and it drains clean because there is nowhere for oil to sit.

Frying slanty papar
Get the oil properly hot, around 180 degrees. Test with one strip: it should sink for a breath, sizzle hard and rise puffed within three to five seconds. Fry a loose handful at a time, because the strips grow to two or three times their dry size and crowd each other if you overload the karahi. Lift them out as soon as they are crisp and pale gold, drain them standing in a strainer, and put salt or chaat masala on in the first minute while the surface still shines, because that is when seasoning sticks. My full method, including what to do when papar refuses to puff, is in our kacha papar frying guide.
At the table, and in the cupboard
Slanty papar belongs with daal chawal and khichdi, and a plate of it next to evening tea needs nothing else. Crushed over chaat it adds crunch without stealing the plate. Raw, it is one of the best keepers in the kitchen: sealed dry in an airtight box it stays good for months. Humidity is its only enemy, so keep it away from the steam side of the stove, and if pieces ever feel soft, half an hour of sun brings the snap back before frying. Fry only what the meal needs, because fried papar holds its crunch for a few hours at most.
