Dal Chana (Nimko)
If you judge a nimko by the noise it makes, this is the champion of the shelf. Dal chana is the chickpea split in half, soaked, dried back and fried hard, then salted. Each small golden piece cracks between the teeth with a sound sev cannot make. It is also the hardest working ingredient we sell: half the mixes in Pakistan, including ours, are built on a base of dal chana, because it keeps its crunch inside a mix long after softer pieces give up. Bought on its own it is Rs 400 for 500g and Rs 800 for 1kg, the same rate as the rest of the daal shelf.

The honest warning
Dal chana is hard. That is not a defect, it is the whole point of the snack, a slow, crunchy, one piece at a time eat. But it means this is not the pack for weak teeth, dentures, or very small children, and we say so at the counter before we sell it, not after. Everyone else gets a snack that lasts: a 500g pack of dal chana outlasts a kilo of sev at any tea table, because nobody demolishes it by the fistful. Being chickpea, it also brings some protein and fibre to what is otherwise a salt and crunch experience.
Beyond the bowl
Regulars buy it as an ingredient as much as a snack. A handful over chaat holds its crunch against the chutneys. Mixed at home with masoor dal nimko, peanuts and sev it becomes your own house mix at half the effort. And fried rice, pulao garnish and even a plain bowl of dal chawal all take kindly to a scattering. The full family tree is drawn out in our nimko types guide.
Storage
Airtight jar, dry place. Dal chana is one of the better keepers among fried snacks because the pieces are dense and dry, but a jar beside the stove will soften anything, this included.
Questions we hear at the counter
How is dal chana different from chole? Chole is the whole chickpea, big and filling at Rs 1,200 a kilo. Dal chana is the split half, smaller, harder and crunchier, at Rs 800. Same family, opposite eating.
Why is it inside every mix? Because it is the crunch that survives. Sev softens against other pieces over time; dal chana is still cracking a week later.
