Chole ( Traditional Snack )
Some snacks on this shelf have been modernised. This one has not. Our chole is the whole chickpea, the big kabuli chana, seasoned and crisped the traditional way until it is firm all the way through. There is no flour coat, no sev, nothing between you and the chickpea. It is the snack your grandfather would recognise, and the one that makes your jaw work for its dinner. The rate reflects the raw material: whole kabuli chickpeas are the costliest of the chana family before anyone cooks anything, so chole sits at Rs 600 for 500g and Rs 1,200 for 1kg.

A handful is a serving
Chole is dense in a way sev never is. A small handful carries real chickpea, with the protein and fibre chickpeas are known for, and it fills a corner that lighter snacks leave empty. That is its job at our counter: the tea sitting where guests stay long, the office drawer, the long drive. Seasoning stays traditional and restrained, salt with a warm spice background, because a whole chickpea has its own flavour and drowning it would waste the most expensive ingredient on the shelf.
How people eat it
On its own with tea, mostly. It also earns its place mixed into a bowl of mix nimko, where its size and firmness give the mix a backbone, and a few pieces dropped into a chaat add a bite that survives the chutneys. If hard, firm snacks are difficult for your teeth, be honest with yourself and choose from the sev family instead; chole does not soften for anyone.
Storage
Airtight jar, cool and dry. Whole chickpeas hold their crunch well, better than most of the daal shelf, but a jar kept beside the stove will still lose the fight against steam within weeks.
Questions we hear at the counter
How is chole different from dal chana? Chole is the whole chickpea. Dal chana is the same family split in half and fried hard, smaller pieces, sharper crunch. Whole costs more and eats more filling.
Why does it cost more than the other chana snacks? Kabuli chickpeas cost more per kilo than split chana or masoor before cooking, and crisping a whole chickpea evenly takes longer than frying a split one.
