Plain chips have nowhere to hide, and that is the point of them. Potato, fried crisp, a light hand of salt, and nothing else: no masala coat, no colour, no flavouring doing the talking. Either the chip itself is good or the bowl exposes it. Ours are the classic cut, crisp through the middle of the slice rather than just at the edges, at Rs 500 for 500g and Rs 1,000 for 1kg, ready to eat straight from the packet. This is the bowl I put out when the table includes everyone: children, elders, and the one guest who finds every masala too much.

The base of a proper homemade chaat
Because nothing is competing on the chip, plain chips are the right foundation for loaded chaat at home. Spread them on a plate, scatter diced onion, tomato and green chillies, spoon over imli chutney and a little whisked dahi, and finish with sev from our nimko range. The chips bring the crunch and the salt, everything else brings the noise. They also sit happily next to sandwiches, burgers and the evening tea tray, and a plate of them with a simple raita dip disappears faster than snacks that cost twice as much.
Keeping the crunch
Chips soften in open air quicker than almost anything we sell, so the habit matters more than the packet. Move them into a dry airtight jar after opening, keep the jar away from steam and sunlight, and close it after every serving rather than at the end of the evening. Bought in the kilo pack, decant half and keep the rest sealed: the unopened half stays as it left us. Serve from the jar in small bowls instead of leaving the whole lot exposed on the table.
