White Beej (Seed)
White beej is the snack Pakistan eats slowly. They are pumpkin seeds in their pale shell, lightly salted and ready to eat, and eating them is a technique: seed between the teeth, a gentle press until the shell splits, out comes the soft green kernel, shell in the bin, next seed. The pace is the product
